For the dough

fast-action dried yeast

lukewarm milk

Method

Step 1
For the rolls, dissolve the fast-action dried yeast (7 g) in milk (250 mL) with a teaspoon of the golden caster sugar and allow it to sit for five minutes. It should look frothy.
Step 2
In a stand mixer (or a bowl if you don’t have one), add the golden caster sugar (100 g) , unsalted butter (80 g) , M&S free-range mixed size eggs (2) , plain flour (500 g) and salt (6 g) . Add the yeast mixture and mix until a dough forms and comes away from the sides. If you’re kneading with your hands, knead until you have a springy dough that isn’t too wet or sticky.
Step 3
Place it in an oiled bowl, cover and let it rise for around an hour until it’s doubled in size.
Step 4
Grease and line a baking sheet and combine the soft dark brown sugar (220 g) and ground cinnamon (8 g) in a bowl.
Step 5
On a lightly floured surface, roll out the dough into a square until it’s around 0.5cm thick.
Step 6
Spread the unsalted butter (80 g) onto the dough, then sprinkle over the cinnamon sugar. Roll the dough tightly into a long log.
Step 7
Cut the log into 3cm slices.
Step 8
To make the bunny shape, unravel a bit of your cinnamon bun round until you can fashion two ‘bunny ear’ shapes out of it. Place them onto a sheet and pop into the freezer for 10 minutes to help them keep their shape.
Step 9
Once they’re out of the freezer, cover and leave for another 30 minutes or so.
Step 10
Preheat your oven to 200°C/180°C fan/gas mark 6. Bake for 15-20 minutes until lightly golden brown.
Step 11
While your bunnies are in the oven, time to make your icing. Mix the butter (80 g) , icing sugar (180 g) , creamy soft cheese (60 g) , vanilla extract (2 mL) and salt (1 pinch) together and whisk until light and fluffy.
Step 12
Once your rolls are cooked, leave them to cool a little and spread with the icing. Finish with some M&S chicky choccy speckled eggs (as needed) .
